Long term, replace highly susceptible bushes with resistant varieties.

Why did my gooseberry lose all its leaves overnight?

Almost certainly gooseberry sawfly larvae, which can skeletonize a bush in a day or two working from the inside out. Check the leaf undersides in the crown of the plant — you'll find the green, black-spotted larvae there. Handpick them and use spinosad if needed. Don't reach for Bt; it won't touch sawfly.
