They armor the soil against erosion

A living canopy breaks the impact of heavy rain before it hits bare ground, and a dense root system physically holds soil in place on slopes and in raised beds. Over a wet winter, an uncovered bed can lose its best crumb structure to compaction and runoff; a covered one stays loose and spongy.

They fix nitrogen from the air

Legumes—clover, vetch, field peas, favas—partner with Rhizobium bacteria in root nodules to convert atmospheric nitrogen into a plant-available form. That nitrogen gets banked in the plant’s tissue and released back to the soil when the crop breaks down. The Common Cover Crops (and When to Reach for Each)

You don’t need an exotic seed catalog. Four or five workhorses cover nearly every garden situation. Here’s how to choose.

Clover (crimson & red) — the beginner’s legume

Crimson clover is fast, forgiving, and gorgeous in bloom (pollinators love it). Sown in early fall, it fixes a meaningful slug of nitrogen and produces tender, low-carbon growth that turns under easily in spring. Red clover is the tougher perennial cousin—great for a bed you can rest for a full season, or for frost-seeding over thin winter stands in late winter. Both are excellent, low-effort nitrogen builders.

Cereal rye — the biomass and weed-suppression king

Winter (cereal) rye is the most cold-hardy cover crop you can plant—it germinates in soil as cool as 40°F and keeps growing later into fall than anything else, which makes it the go-to for late plantings after your last crops come out. It produces enormous root and shoot biomass, scavenges nitrogen aggressively, and suppresses weeds better than almost anything. The trade-off: that same vigor makes it the hardest to kill by hand, and its high-carbon residue ties up nitrogen as it breaks down. Hairy vetch — the nitrogen heavyweight

Hairy vetch is the legume you plant when nitrogen is the whole point. Overwintered, it can bank a large amount of nitrogen and pairs beautifully with rye—the rye gives the sprawling vetch something to climb, and the combo balances carbon and nitrogen so the residue breaks down cleanly. A rye-plus-vetch mix is the classic all-purpose overwinter cover for a reason.

Buckwheat — the fast summer smother

Buckwheat isn’t an off-season crop at all—it’s a warm-season sprinter. Sown in an empty summer bed, it germinates in days, flowers in 30–45 days, smothers weeds, and pulls a burst of pollinators and beneficial insects. It has zero frost tolerance, which is a feature: one hard frost kills it and leaves a light mulch. Use buckwheat to fill the gap between a spring crop and a fall one, or to condition a rough bed before sowing fine seed like carrots.

Oats, field peas & radish — the easy-exit options

In cold-winter regions, oats and field peas are the beginner’s dream: they grow fast in fall, then winterkill at hard frost, leaving a soft mulch you can plant straight into come spring—no mowing, no digging, no termination work at all. Add daikon radish to the mix for compaction-busting, and you have a “plant it and forget it” combo that’s hard to beat. When to Sow

Timing is everything with cover crops—get it right and the crop establishes on its own; get it late and you’re looking at bare, weedy soil all winter.

  • Fall (the main event): Sow as beds open up after summer harvest, aiming to get seed down at least 4–6 weeks before your first hard frost so plants root in before cold shuts growth down. Cereal rye is the exception—it establishes late and forgivingly, so it’s your fallback when you’ve run out of runway. This is also the natural window to tuck cover crops around fall-planted garlic.
  • Summer: Drop buckwheat (or a quick oats/pea mix) into any bed that’ll sit empty for 30–60 days between crops. It’s the best use of a fallow midsummer bed.
  • Late winter / early spring: “Frost-seed” clover by broadcasting onto thawing, honeycombed soil—the freeze-thaw cycle works the seed in. Or sow a fast oats/pea stand for a short green manure before warm-season transplants.

How to sow: For garden beds, broadcasting by hand is plenty. Rake the seed in lightly for good soil contact, tamp the surface, and water if rain isn’t coming. Small seeds like clover need only a shallow scratching-in; larger seeds like peas and rye want to be buried about an inch. A rough rule for beds: a couple of ounces of seed covers 100 square feet for most species—err toward a slightly heavier rate than a thin one, since gaps are just invitations for weeds.

How to Terminate a Cover Crop

Termination is the step beginners fumble most, and it’s where a cover crop either becomes fertility or becomes a weed. The two rules that matter: kill it before it sets viable seed (or you’ll be fighting volunteers for years), and time it to peak biomass, which for most crops is right at or just before flowering.

Let winter do it (winterkill)

The easiest termination is none at all. Oats, buckwheat, field peas, and non-hardy radish die outright at hard frost and collapse into a mulch you plant directly into in spring. This is why they’re the top pick for anyone nervous about the whole process.

Mow or cut, then turn under (classic green manure)

To make green manure, cut the crop down at flowering and either turn the residue shallowly into the top few inches of soil or leave it on the surface. Then wait before planting: 2–4 weeks for tender legumes and buckwheat, and a solid 3–4 weeks (or more) for high-carbon rye. That waiting period is non-negotiable—fresh decomposing residue can temporarily tie up nitrogen and release compounds that stunt young seedlings.

Tarp it (occultation)

Mow the crop low, then cover the bed with an opaque silage tarp for 3–4 weeks. The dark, warm, moist conditions kill the crop and germinate-then-smother the weed seed bank in one pass, leaving a clean, plantable surface with your soil structure fully intact. It’s the no-dig gardener’s favorite.

No-Till Crimping

Crimping is the technique that lets you kill a cover crop without tilling and without a tarp—you crush the stems flat to create a thick, weed-suppressing mulch mat, then transplant right through it. On a farm this is done with a roller-crimper; in a garden, a heavy board, a filled lawn roller, or simply walking the crop down does the same job.

The catch is timing, and it’s strict. Crimp too early and the plant just bends and keeps growing. You have to wait until the crop hits the right growth stage—for cereal rye, that’s anthesis (when the seed heads shed pollen); for vetch, early flowering. Crimp at that stage and the crushed stems die cleanly, forming a mat that holds soil moisture, blocks weeds for weeks, and slowly feeds the soil as it decomposes. Cereal rye is the gold-standard crimping crop precisely because it produces so much durable, weed-suppressing biomass. Set out robust transplants—squash, tomatoes, brassicas—into pockets opened in the mat, and you get living-soil benefits with almost no bare ground exposed all season.

How Cover Crops Build Living Soil

It’s tempting to think of cover crops as slow fertilizer, but the real magic is biological. While the crop is alive, its roots are pumping sugars into the soil around the clock, feeding bacteria and mycorrhizal fungi. Those microbes glue mineral particles into stable aggregates—that crumbly texture that drains well and holds moisture. A winter under a living cover is a winter of soil-structure building you simply can’t buy in a bag.

When the crop is terminated, the second act begins: decomposition. Soil life eats the residue and, in doing so, converts locked-up plant tissue into slow-release, plant-available nutrients—the same principle behind composting, just happening in place. The carbon-to-nitrogen ratio of your residue decides the pace: leafy young legumes are low-carbon and break down fast, releasing nitrogen quickly, while mature grass and rye are high-carbon and decompose slowly, briefly borrowing soil nitrogen before giving it back. Two organic inputs genuinely earn their place in this handoff—though the cover crop is doing the heavy lifting, and you don’t need all of them to succeed:

Common Mistakes

  • Letting it go to seed. The number-one error. A cover crop that matures seed becomes next year’s weed. Terminate at flowering, before viable seed forms.
  • Planting into fresh residue too soon. Green manure needs 2–4 weeks (longer for rye) to break down before you sow or transplant. Rush it and decomposing residue will tie up nitrogen and stunt—or outright kill—your seedlings.
  • Sowing too late in fall. Miss the 4–6-week pre-frost window and you get weak, patchy establishment. If you’re late, switch to cereal rye, which forgives it.
  • Not inoculating legumes. Without the right rhizobia, clover and vetch grow fine but fix little nitrogen—you get biomass without the payoff.
  • Choosing rye you can’t manage. Cereal rye is spectacular but genuinely hard to kill by hand. If you don’t have a way to crimp, mow, or tarp it, pick oats and peas that winterkill instead.
  • Leaving bare patches. Thin, gappy stands from poor seed-soil contact just hand the open ground back to weeds. Sow at a generous rate and rake the seed in.

Frequently Asked Questions

Do cover crops really add nitrogen, or do I still need to fertilize?

Both are true. Legume cover crops genuinely fix nitrogen (as long as the right rhizobia are present), and grasses recycle nitrogen that would otherwise leach away. But a single cover crop won’t fully feed a hungry crop like corn, tomatoes, or brassicas. Think of green manure as building your soil’s baseline fertility—you’ll still top off heavy feeders at planting, just with far less bought-in input than a gardener starting from bare, depleted ground.

Can I grow cover crops in raised beds or containers?
